My foodie heart is bursting at the seems at the thought of summer produce filling my plate so soon...a plate of heirloom tomatoes sprinkled with salt for dinner? Next time you are at the market, grab whatever spring green makes your heart flutter...put it in a pan with olive oil, salt, and pepper...crack some eggs on it and bake. Top with goat cheese or feta, fresh herbs, plus a good squeeze of lemon and thank me later.
